Jalapeno Jelly Tequila Shots – Feb 2nd

One 1/4-ounce package unflavored gelatin powder

1 cup tequila Finely grated zest of 1 lime plus 1/2 cup lime juice

12 large jalapenos (about 4 inches in length, not counting the stem)

2 tablespoons sugar

Pinch kosher salt

Put 1/4 cup cold water in a small microwave-safe bowl and sprinkle over the gelatin. Let stand for 5 minutes to bloom.  Microwave the mixture until the gelatin liquefies, about 20 seconds. Stir to make sure the gelatin is completely dissolved. Combine the tequila and lime juice in a liquid measuring cup and stir in the gelatin mixture.  Cut 1/4 inch off the stem end of each jalapeno and use a 1/4-teaspoon measure to scoop out the ribs and seeds from each. Stand the jalapenos cut-side up in a plastic container large enough to fit them in a single layer, wedging them as much as possible so they stay in place without causing them to break or change shape. Pour some of the gelatin mixture into each, filling them just to the top (about 2 tablespoons in each). Refrigerate until the gelatin is set, at least 6 hours and preferably overnight.

Combine the lime zest, sugar and salt in a small bowl and rub with your fingers until the lime zest is evenly mixed in.  Using a paring knife, trim off and discard the tapered end of each jalapeno, then cut the jalapenos in thirds crosswise. If not serving right away, put the jalapeno pieces on a baking sheet and return to the fridge to chill until ready to serve, up to 2 hours.  When ready to serve, spread a bed of finely crushed ice on a rimmed serving dish so that it creates a flat surface and arrange the jalapeno pieces on top. Serve with the lime zest mixture on the side.

Report this ad

Preheat oven to 350 degrees. Lightly grease a nonstick

popover pan

Scoop mixture into popover pan and press to the bottom and sides, making sure to leave a hole in the middle for the milk to go later. You only need the sides and bottom to be about ¼ inch thick. It’s hard to get it much thinner.

Place a cork wrapped in foil inside to make room for the liquor later…

Bake in the preheated oven for 18-20 minutes until cookies get a golden brown kiss.

Carefully remove the cookies from the popover pan. This can be done by placing a large cutting board or pan over the popover sheet and flipping it over. Gently tap the bottoms of the popover cups to loosen. Let cool completely.

Carefully melt the remaining 1 cup of chocolate chips in a microwave safe bowl by microwaving for 15 seconds at a time, removing and stirring, until chocolate is melted.

Coat the holes in the cookie cups with the chocolate. Drizzle some in and swirl, or if your chocolate is on the thicker side just give it a good smearing.

Refrigerate until chocolate is set.

Important Information !!!!!

TSA Alcoholic Beverages Regulation

Travelers may now carry through security checkpoints travel-size toiletries (3 ounces or less) that fit comfortably in ONE, QUART-SIZE, clear plastic, zip-top bag.

*According to the FAA’s Federal Aviation Regulations, Sec. 121.575, “no person may drink any alcoholic beverage aboard an aircraft unless the certificate holder operating the aircraft has served that beverage to him.” In other words, you can’t drink it unless a flight attendant serves it to you.

You could be fined anywhere from $3,000-$5,000for violating federal law if you decide to start mixing up your own cocktails, so it might be a good idea to just pay for your own drinks. Better yet, ask the flight attendant to make it for you!

Ingredients:

1 ripe watermelon

1 bottle desired liquor (“Spike” can be vodka, rum, tequila, gin, etc.)

Mixing Instructions:

Lay the melon on its side and make a circular cut in the rind as big as the diameter of the neck of the liquor bottle. Remove plug, set aside. With a swift (and accurate) move, insert the neck of the bottle into the watermelon hole. Press the bottle into the watermelon as firmly as possible. The bottle should drain slightly… you will need to let it sit a while, perhaps overnight. After the watermelon has absorbed as much of the liquor as it can, remove the bottle. Replace the plug and cover it with duct tape to make sure the flavor can sink in. Refrigerate or place in a cooler with ice… Serve cold and sliced!

This was a unanimous SWALLOW!

Collect your favorite juices: pineapple, guava, raspberry, acai, kiwi, mango, peach, the list goes on.

Pick up some flavored alcohol like Bacardi rums in coconut, watermelon, lemon, raspberry or Zone flavored vodkas: banana, melon, peach, lemon and tangerine.

Mix the juices with the alcohol using this ratio:

3 cups of juice

2 oz. of alcohol

(You don’t want to make them much stronger because the alcohol will not freeze.)

For extra credit add frozen chunks of fruit like mango, banana and raspberry. You can even add herbs like chopped mint or basil.

Pour the juice and alcohol mixture into the popsicle molds and freeze.
